Chocolate Strudel
When a sweet craving comes along (aka all day every day), there’s different types of sweets to choose from. For example, a chocolate craving for brownies is completely different from a chocolate craving for a candy bar. But one thing I can almost always go for is some kind of chocolate pastry and this chocolate strudel is one of my favorites because it’s so decadent, yet so simple to make.

~ 1 puff pastry sheet, thawed
~4 oz semi-sweet chocolate chips
~½ cup chopped walnuts or pecans
~1 tbsp butter
Starting with the chocolate, we’re going to microwave that for one minute, stirring after the first 30 seconds. Then add in the butter and continue microwaving and stirring in 30 second increments. It’s important to only microwave the chocolate for a few seconds at a time to keep it from drying out and clumping up. If that happens, just add more butter until it’s all melted and glossy.
Lightly flour a flat surface and gently roll out the puff pastry sheet until it’s about the size of a 12 inch square. Then spread the chocolate onto the pastry, leaving about ½ inch at the edge. Sprinkle the chopped nuts on top of the chocolate and start rolling the pastry, jelly roll style.
Place the seam side of the roll down on a parchment paper lined baking sheet and fold the ends underneath. To make it look a little fancy, cut some diagonal slices along the top and bake at 375° for 30-35 minutes. I always set my timer for a little less than what’s recommended and just keep a close eye on it as it gets close to being done. Especially when working with puff pastry, that can overcook real quick!
Once it’s done baking, let it cool on a wire rack. When it’s cooled down a little bit, sprinkle it with some powdered sugar and serve.
This could be served with breakfast, as a side pastry with some coffee or hot tea, or just enjoyed on its own which is what I normally do. The semi-sweet chocolate chips is really what makes all the difference. But I’m warning you now, this is highly addictive! I could eat this entire strudel by myself in one day!
