Berry Cobbler Recipe

Cobbler is such a classic dessert and a staple in most homes. It’s easy to make, it’s comforting, and it’s the perfect compliment to almost any meal. I’ve toyed around with a few different methods and I’ve finally found one that is practically foolproof. It can be paired with many different fruits and always comes out delicious!

The ingredients needed are:

~½ cup plus 2 tbsp melted butter, divided

~1 cup self rising flour

~1 ½ cups sugar, divided

~1 cup milk

~½ tsp vanilla extract

~3 cups of fruit

The first step is to pour ½ cup of the melted butter into an 8 inch square baking dish. Then combine the flour, 1 cup of sugar, milk, and vanilla in a medium size bowl. The batter may have lumps and that’s okay, don’t worry about smoothing it out. Pour the batter on top of the butter in the baking dish. It may seem a little strange, but it works.

To minimize dishes, use the same bowl to make the berry mixture. Combine the berries with the remaining ½ cup of sugar and 2 tbsp of melted butter. Be gentle when tossing to avoid crushing the fruit. Then spoon the berry mixture evenly over the batter and bake in a 350° oven for 45-50 minutes.

Once the top is golden brown and the fruit is tender, take it out of the oven and allow it to set. The butter may still be bubbling around the edges, but will eventually settle into the cobbler and keep it juicy. After it’s settled, serve warm with vanilla ice cream or whipped topping on the side. Any leftover cobbler should be stored covered in the fridge and will stay good for a few days.

Making desserts from scratch may seem intimidating at first, but they don’t have to be! This recipe is quick, easy, and tastes amazing with just a few ingredients. The double and triple berry options are my favorite, but I’ve also made this cobbler using only one fruit like blackberries or peaches and that was just as delicious!
