Pumpkin Cream Cold Brew

We’ve made it to October and it’s officially Fall, even if it is still 90+ degrees outside. I know pumpkin spice everything comes out earlier and earlier every year, but I really do love Summer and I try to make it last as long as possible. Thankfully, living in Florida, that’s not a problem! I hold off on all the pumpkin goodies until at least October. This year Starbucks has come out with a new Pumpkin Cream Cold Brew drink, which really grabbed my attention. It looked like a fun way to jazz up my daily iced coffee and only includes two ingredients!
All you’ll need is:

~Pumpkin pie mix
~Heavy whipping cream
The directions are about as easy as the ingredients list. Just add the two together in a bowl and beat until it becomes thick, almost like whipped cream. I used two heaping tablespoons of the pie mix and ½ cup of the whipping cream. If you’re brave, you can beat it by hand with a whisk. I brought in an electric hand mixer and used that on medium speed for about 4 minutes.
This is seriously so yummy, I could eat it straight out of the bowl! You could buy pumpkin puree and add in all the sugar and spices if you want to make it real complicated, but this is just so easy. To make the actual drink, I poured some of my favorite cold brew coffee into a glass filled with ice, added some Torani vanilla syrup for personal preference, topped it with two dollops of the cream, and finished with a sprinkle of Pumpkin Pie Spice to make it look fancy. The leftover cream mixture can stay in a Pyrex glass bowl in the fridge for a few days.
Honestly, y’all, I never go to Starbucks. It’s probably been over a year since I’ve gotten one of their coffees, but I love how unique this new pumpkin cream is. The flavor is perfect and I actually think it has a stronger pumpkin taste compared to the beloved pumpkin spice latte. I like that the foam stays, even if you stir it in. Making this at home is wayyy cheaper, especially when considering how many drinks you’ll get out of it!
