Chicken Salad Recipe

When I was younger, my parents (and everyone else around me) used to joke that one day I would start growing feathers because I ate so much chicken. It’s always been my favorite and even as an adult, I have to talk myself into switching it up. Otherwise I’d eat some sort of chicken dish every day of the week. I just think there’s so much you can do with it, and it all tastes delicious! One of my favorites has always been chicken salad. Over the years, I kept tweaking my recipe until it was perfect. Now I’ve got it and it’s just too good not to share!

The ingredients:

~rotisserie chicken
~celery
~mayo
~red grapes
~chopped pecans
~onion
I get my rotisserie chicken at Publix because their Mojo flavor is my absolute favorite. If you have a Publix near you and you haven’t tried it yet, you’re really missing out! You could obviously make the chicken however you want, but having a rotisserie one makes it so much easier to shred.
Once the chicken is shredded and in a large bowl, I prep the rest of the filling. For one rotisserie chicken (minus the thighs and wings), I add ½ an onion, 1 stalk of celery, and just kinda eyeball the amount of grapes and chopped pecans until it looks like an even amount of each.
Then I combine everything into the large bowl with the chicken, also adding in some mayo, salt, and pepper. I typically only use 1-2 tbsp of mayo since it’s not my husband’s favorite thing in the world. That amount still keeps it all together without it being a mayo overload in every bite. I’ve found that using a fork to stir everything in is better because it can also help to shred any large pieces of chicken you may have missed.
The mixing bowls I use have matching lids, so you can go from preparing the food to popping it right in the fridge to store. This typically stays good for about a week. Although it can separate, so it will need stirring after being stored for a day. One of my favorite things about chicken salad is that it only takes a few minutes to prepare and then you have a healthy snack ready to go whenever you’re hungry.
I love this recipe! I could easily just sit there and eat it right out of the bowl, but my two favorites are to pair with crackers or on a sandwich with lettuce and tomato. It’s so refreshing and goes perfect with my favorite smoothies that I just recently talked about. You wanna talk about a delicious lunch combo! Mmmmm!! ♥ ♥
