Peach Nut Bread
Bread used to be so intimidating to me when I first thought about making it. I don’t know why, I just made it seem like so much more of a big deal in my head than what it actually is. Dessert breads are my preference to bake and this Peach Nut bread is probably my husband’s favorite of them all. Let me be clear, though, this recipe came from one of the greatest chefs ever: Chef Bob. It’s just too good not to share with the world!
The ingredients needed are:
~2 cups peaches, diced
~1 stick butter, melted
~⅔ cup brown sugar
~½ cup honey
~1 tsp vanilla
~¾ cup orange juice
~¾ cup hot coffee
~2 cups flour
~1 tsp baking soda
~1 tsp salt
~1 egg
~1 cup chopped pecans
The directions to this recipe could not be any more simple: put all the ingredients into a bowl and combine. There’s no mixing the dry ingredients first and then adding in wet ingredients. It’s just nice and quick. Then pour the mixture into a greased bread pan and bake in a 325° oven for 1 hour.
The full recipe makes 2 loaves. I typically cut that in half to only make one. To half the recipe, I do have to slightly mix the egg and half that. It sounds complicated, but I don’t think it makes that big of a difference when working with such a small amount.
The original recipe also calls for fresh or frozen peaches. I used canned and it seems to work just fine. A few other adjustments I made to make it easier are omitting 1 tsp of orange zest, using light brown sugar vs the recommended dark, and store bought orange juice instead of fresh squeezed. I’m sure these would make a difference in the outcome, but I like to simplify everything in life as much as possible. Ya know?

What I mean by “original recipe” is that I found this bread in a cookbook (Cooking in the Deep-South with Chef Bob) that I got for my husband. It was created by Chef Bob, who also catered our wedding. He is one of, if not the, best chef ever. I’m a pretty picky eater and I’ve loved things he’s made that I wouldn’t otherwise even think about touching.
We’ve tried a few recipes in his book that have all been absolutely delicious, but this Peach Nut Bread is one we always go back to. You know a recipe is good when you can even remember the page number it’s on! If you like southern comfort food (my fave), I definitely recommend picking up this cookbook on Amazon. It’s one of the very few cookbooks we use in our house.

This week I’m wearing another polish from the EMMA Beauty Las Vegas collection. This shade is called D.J. or Buffet? and I love the soft banana cream-like finish that it has. It wasn’t the most opaque formula, but I was able to make it work. Out of the other pastels I’ve been trying from this collection, this is one of my favorite.
